What a nouille! – Soba noodles with edamame, grilled zucchini and Chinese cabbage – lemon basil pesto

Nouille in French means noodle of course, but if you call someone a “nouille“it’s not really a compliment and means you are calling this person an idiot. So today, I do feel like a nouille, because I keep buying soba noodles and never eat them. Actually, I rarely think of preparing or eating soba noodles, probably due to my Italian upbringing…even though my pantry is filled with all kinds of soba.
I see them every day, but no… the idea of eating them, does not even cross my mind. I look at them and think, oh wow! I have so many soba in there. That’s it…the thought stops there. Isn’t that strange? It’s funny how we get stuck into habits. Well, today I decided to make a change, free some space in the cabinets = EAT SOBA. Of course, soba being Japanese, I didn’t want to prepare them the Italian way, and offend them. I tried to be faithful to their essence. For whatever reason, soba reminds me of Geisha, something delicate, and complex at the same time.
Since I have been cooking a lot of vegan meals lately, I can assure you that this dish would please any vegan out there. I combined some Eastern-Western flavors and everything made sense in this dish, from the textures, to the flavors, the colors. Yes, everything. The herbs make it fragrant, taste fresh, the lemon gives it a clean aftertaste, and all combined with the natural nuttiness and sweetness of the buckwheat make it a perfectly balanced and delightful dish. As we say in French “Essayer, c’est l’adopter“, to try it, is to adopt it…so just try it.
Ingredients for 2
- 220 g buckwheat soba
- 1 cup edamame, frozen
- 2 zucchini, sliced
- 4 Chinese cabbage leaves, thinly chopped
- zest of 1 lemon
- 1.5 cups basil leaves
- 1 garlic clove, crushed
- olive oil
- salt and pepper
Preparation
In a blender mix garlic, basil, salt and pepper. Blend to a fine consistency. Add lemon zest. Set aside.
Grill zucchini on both sides using a grill pan. Cut in 4 pieces. Boil edamame in boiling water for a few minutes or place in microwave to defrost. Saute cabbage in 1 tsp olive oil.
Cook soba for about 5 minutes in a slightly salted boiling water. Rinse in cold water. Combine all ingredients together in a mixing bowl. Add pesto and toss well. Eat cold or at room temperature.
The great seaweed – Spirulina tagliatelle with vegetables, shiitake, shrimps and sea spaghetti

Tagliatelles à la spiruline aux légumes, shiitake, spaghetti de mer et crevettes
I have been quite excited today, I managed to prepare this colorful pasta dish and my parents really liked it. I was not expecting such a reaction from two traditional Italians eating a pasta dish that has nothing to do with Italian flavors. I went shopping to La Vie Saine which is a healthy and organic supermarket with lots of unusual products, and I just wanted to see what those green tagliatelle tasted like. Their color comes from the Spirulina which, in the US is mainly a seaweed used as a dietary tablet supplement. Spirulina is very high in protein much more than any type of legume.
In addition to the spirulina tagliatelle, I used a specific seaweed, mainly found in Brittany coast (Roscoff area) called Himanthalia Elongata and has a very high vitamin C content. Unlike most other seaweed, it’s not produced in Japan. It’s basically a brown seaweed that has the form of big button where long stems start their ramification.
I really loved this pasta, it’s colorful and absolutely delicious. Now I am curious to see if it’s available in the US. Upon my return, I will start my spirulina pasta hunting! I am always excited to see the new trends in France, even though you still have a traditional cuisine, new trends are arising and I noticed that la cuisine aux algues (seaweed cooking) is getting quite popular. Of course, not among the traditional eaters, but among adventurous eaters, interested in a new and healthy cuisine.
Ingredients for 4
- 1 tsp ginger, grated
- 1 garlic clove, crushed
- 1 tbs olive oil
- 350 g spirulina tagliatelle
- 2 carrots, sliced lengthwise in a ribbon
- 1 zucchini, sliced lengthwise in ribbons
- 1 cup shiitake mushrooms, diced
- Sea spaghetti seaweed
- 1/3 cup vegetable broth
- 1 cup shrimps
- salt and pepper
Preparation
In a pan, heat olive oil. Add garlic and ginger. Stir and add shiitake, cook for about minutes, then add the rest of vegetables. Let the zucchini soften but do not overcook or they’ll break.
Soak sea spaghetti in cold water for about 15 minutes, then boil them in water for another 15 minutes or until they get soft. Drain and set aside.
Add sea spaghetti to the vegetables and stir. Add shrimps and broth, salt and pepper.
Cook pasta in salted boiling water until al dente. Drain and add to the pan of vegetables. Stir well and serve.

If you don’t like squid, you can use anything you like, such as shrimps, mussels, chicken, etc…I have a little weakness for strange things coming from the sea with tentacles, so you’ll find many recipes on this blog with squid, octopus, etc…
The rice was cooked like paella along with the vegetables and the broth, but it’s definitely not paella. It’s a simple dish that would fit in the category “comfort food” even though I don’t like to think of food as being comforting. It makes me feel that at some point, it replaces a friend and that is a strange perception. I don’t think there is a translation in French for “comfort food”, I would think the closest word would be “appaisant” or “calmant“, appeasing? calming?
The presentation is not that delicate, nor elegant, but it is indeed colorful. This is one of those dishes you really enjoy when you have a craving of rice, seafood and greens but also when you don’t have time to “take care” of your dish. It just cooks by itself with no surveillance.
In a week from today I will be on a flight to go home, let’s hope by then the bad weather will no longer be bad…so that means eating a lot of seafood. In France during the Christmas holidays, seafood is all over, crab, lobster, oysters, etc…and its the time of the year when seafood it’s the freshest.
Ingredients for 4
- 9.87 oz (or 280 g) basmati rice
- 1 lb squid, cleaned
- 2 shallots, chopped
- 2 garlic cloves, crushed
- 1 carrot, peeled and julienne
- 2 zucchini, julienne
- 1 fennel, chopped
- 1 dose saffron
- 16 fl oz vegetable broth
- 1/2 tsp paprika
For the spinach
- 2 bunches spinach
- 2 garlic cloves, crushed
- zest of 1 lemon
- 2 tbs olive oil
- salt and pepper
Preparation
Heat olive oil in a large pan. Add shallots and garlic, stir. Add vegetable julienne, and cook for about 5 minutes. Add saffron and stir. Add rice. Coat the rice with oil. Add broth where saffron had been infused. Then add squid. Adjust with salt and pepper. Cover with a lid and cook at low temperature for about 15-20 minutes.
For the spinach, heat olive oil in a pan, add garlic. Stir a little without burning the garlic, add washed and drained spinach. Adjust with salt and pepper. Cook until the spinach are soft.
Divide spinach in each dish and spoon over calamari-rice on top.
A little bundle of joy – Napoléon of eggplants, king oyster mushrooms and manchego – Tomato concassée

Un brin de bonheur – Napoléon d’aubergines, pleurottes géantes et manchego – Concassée de tomates
For the pastry “connaisseurs“, Napoléon is a famous pastry from Eastern Europe, made out different layers of crème patissière (custard), and puff pastry. While in Lithuania, and during its Russian campaign, Napoléon fell in love with this dessert, and named it after himself. The rumors even say that he lost the battle of Waterloo, because he ate so many of these the night before the battle. But of course, those are earsay, and only historians can prove this fact.
This is my savory version of Napoléon. This savory Napoléon has different layers of king oyster mushrooms and eggplants. King oyster mushrooms are simply oyster mushrooms that are grown to a large size, just like portobello are cremini mushrooms grown until they reached a particular size. What I like about king oysters is their meaty legs that remind of the fresh porcini, you can just slice them and enjoy them saute with garlic and parsley or any way you like.
This savory version of Napoleon has manchego and a drizzle of a parsley/garlic/paprika/olive oil mixture in between the layers, which adds a pleasant note to each bite. The concassée finishes the dish with a nice balance of chili and slight acidity of the tomato.
These cute little bundles of vegetables can be served as an appetizer, then two would be perfect, but then there is no rule in the number want to add on each plate.
Ingredients for 4-6 pieces
- 1 medium size eggplant (seedless), sliced
- 1 large king oyster, sliced
- 1/2 cup manchego, sliced
- 1 zucchini, sliced lenghtwise
- 1 tbs olive oil
- Fleur de sel
- pepper
For the herb-oil
- 1 tbs parsley, finely chopped
- 1 garlic clove, crushed
- 1 tsp balsamic vinegar
- 1/4 tsp paprika
- salt and pepper
For the tomato concassée
- 2 medium sized, heirloon tomato, chopped, peeled and seedless
- 1 tbs extra virgin fruity olive oil
- cayenne pepper
- fleur de sel
Preparation
Grill eggplants on a grill pan or cast iron grid. Set aside. Saute mushroom slices in 1 tbs olive oil. Slice zucchini with a mandoline, making ribbons. Grill zucchini on a grill pan. Set aside.
For the herb-oil, mix all ingredients together in a small bowl.
For the tomato concassée, after peeling the tomatoes, crush one tomato, with a mixer to make a purée. Cut the other tomato in small pieces. Mix both tomatoes, add cayenne, pepper and fleur de sel. Add olive oil. Mix well.
Start assembling the napoleon. In a flat surface, place one slice of eggplant. Add 1/2 tsp of herb-oil. Place one slice of mushroom on top. Add manchego. Proceed with another slice of eggplant, mushroom and manchego. Wrap it all with two slices of zucchini (one might be too short to be wrapped around). Place in a pre-heated oven at 390F until the manchego has melted.
Serve in a plate with one tbs of tomato concassée. Drizzle extra olive oil on the tomatoes, and add some cracked black pepper.

I made a large quiche just like those mini ones for a dinner party, and I had leftover dough…which I did not want to throw away. Why throw away food that you enjoyed making and put time into it? I love to play with crusts, quiches and tarts, after all, they’re the basics of French cuisine. For savory tarts, I love to use olive oil instead of butter in the crust, and make it wholesome. Olive oil adds a wonderful flavor to crusts and cakes and make them lighter. Of course traditional French cuisine uses more butter, but this blog is not about traditional French food.
I love the combination of zucchini, feta and mint, they pair so well in almost anything such as in savory cakes, flans, couscous, etc…The crust and its herbes de Provence flavor, gives you a kick of Southern French cuisine, with all its aromas, and fragrant scents. Yes indeed, these quiches will bring some warmth and will brighten your day, as Southern French food does, it’s filled with flavors, colors and freshness…so isn’t this a bit of happiness too?
I am one of those crazy people that get affected by the weather, and a bright day with natural light gives me so much happiness. If I could chose the perfect weather it would be a sunny day with 80F temperature, with a light breeze. If anyone of you live in that particular climate, please let me know and I will just move there!

There is a French expression that most old people would respond to when asked, comment allez-vous? “How are you doing?” most of them respond, oh comme le temps!, meaning “like the weather”, which really can show you how much the French are truly “doing” like the weather! so if it’s raining, you can just imagine how they’re doing! Ask no more…
Ingredients for 4 mini quiches
For the crust
- 4.4 oz (or 125 g) wholewheat flour
- 1.69 fl oz (or 50 ml) olive oil
- 1 tsp herbes de Provence
- water
- a pinch of salt
For the filling
- 2 tbs kalamata olives, chopped
- 2 small zucchini, thinly sliced with a mandoline
- 2 tbs feta, crumbled
- 1 tbs mint, chiffonade
- 2 eggs
- 4 tbs heavy cream
- 4 tbs milk
- cayenne pepper
- salt and pepper
Preparation
For the crust
Place flour in a mixing bowl, then add herbes de Provence, salt, oil, and start mixing, add water gradually enough to make the dough elastic and not crumbly. Mix well to form a ball. Wrap in a plastic film and place in the refrigerator for about 30 minutes.
Divide dough in four parts and using a rolling pin, roll into 4 round sheets. Lay flat inside four tart molds.
For the filling
Place sliced zucchini in a bowl and sprinkle with coarse salt, mix well to coat. Let it sit for 15 minutes. Rinse under cold water, squeeze extra water using your hands and pat dry using a paper towel. Cut roughly.
Place olives on top of crust. Mix zucchini, feta and mint and put mixture on top of olives.
Beat eggs with cream and milk, a little salt (not too much since the feta is salty and the zucchini have absorbed some salt too), and cayenne pepper. Pour on top of zucchini mixture.
Cook in a pre-heated oven at 375F for about 20-30 minutes until the top is golden brown and the crust is cooked on the bottom.
Back to Provence – Tian Provencal and tapenade tartine

De retour en Provence – Tian Provençal et tartine de tapenade

Tian is a traditional dish from Provence, and should be made in a clay dish…since I just broke mine, I had to use a Pyrex one. The vegetables are sliced thinly, placed upright and cooked in the oven for a long time. You can add goat cheese as well, but I wanted to keep it vegan and light, so to get additional Mediterranean flavors, I served it with a tapenade tartine. This is a very simple dish to make yet delicious due to the slow cooking of the vegetables and all the herbs that have infused in it.
Of course, there are various recipes for tian, some people don’t add onions, but fennel, or potatoes, but tomatoes, zucchini and eggplants should always be around. You can play around with herbs, cheese, etc…but I wanted to keep it simple. Sometimes I like simple flavors and don’t want to add too many intricate and complex flavors into a dish. The slow cooking turned the vegetable almost “confits” in the herbs and own juices.
Usually tians are served with grilled meats or fishes, they add wonderful aromas to a dish. I have to admit that I ate the whole tian by myself and was still hungry. Usually this would be sufficient for four, if you serve it with a fish or meat, or also rice in case you want to keep it vegetarian. It really depends on how much vegetables your guests can eat. Quand on aime, on ne compte pas, that’s what the French say, when you love, you don’t count…which is true for many things. The tapenade tartine is a nice element if you want to keep your meal vegan, that olive spread is simply divine with this tian.
Ingredients for 3-4
- 3 large tomatoes, sliced crosswise
- 3 zucchini, sliced crosswise
- 2 medium eggplants, sliced crosswise
- 1 onion,
- lavender salt
- 2 garlic cloves, crushed
- 1 tsp fresh thyme, chopped
- 1 tsp fresh oregano, chopped
- 1 tsp basil, chopped finely
- 2 tbs olive oil
- pepper

Preparation
Spread some olive oil, all over the dish, preferably a clay dish.
Place all vegetables upright in the dish, alternating between a slice of tomato, two slices of zucchini (since the zucchini tend to be smaller), one slice of eggplant, and onion. The vegetables need to be tightly arranged so they stand still.
Add herbs and garlic, sprinkle with lavender salt and pepper. Add olive oil all over the vegetables.
Cover with aluminium foil and cook in a pre heated oven at 365-370 for about 40-45 minutes. Remove the foil and let the vegetables get golden brown.

Yes time flies and I just realized that this is my 300th post! I completely forgot the 100th and 200th…
I knew when I ordered a new washing machine and dryer that something was going to happen and something did happen…today’s delivery has been canceled because they were in back order. So I have to keep running the dryer six cycles to have the clothes dry. I bet PG&E are thrilled and my mom to lift me up, told me “you don’t need a dryer, it ruins all the clothes”. Very few people have a dryer in Europe, so for most Europeans it’s an unnecessary item…let’s not put all Europeans in the same basket, let’s just say for my mom…but I don’t know anyone who has a dryer among my friends and family.
I was somehow disappointed and bummed, and not in the mood for cooking long and complicated meals…and since I had all the ingredients without rushing to my Greek grocery store, there was no question, I was going to make this soup. I used to make it quite often, then for whatever unexplained reason, it stopped appearing on my table…let’s go back to old recipes, sometimes you forget how great they are. This soup is filled with vegetables and is absolutely a, and 100% vegan. The tofu croutons do add this chewy/crunchy texture that blends beautifully with a spoonful of fragrant creamy soup. You can serve this with a tapenade tartine, so the leftover tapenade from yesterday came in handy. The olives complement the flavors of the soup to perfection. For the broth quantities, you will have to adjust it to your tastes, some people like their soup thicker, some people prefer it thinner, so you will have to play around with it.
- 1 eggplant, sliced crosswise
- 1 onion, chopped
- 4 zucchini, sliced
- 1 red bell pepper, roasted, peeled and sliced
- 4 tomatoes, peeled and seedless
- 1 garlic clove
- 1 tbs oregano
- 1 tbs olive oil
- vegetable broth
- extra firm tofu
- flour
- fleur de sel
- pepper
Preparation
Grill bell pepper under broiler until the skin get charred. Peel and remove seeds. Cut in slices.
Place all the remaining vegetables in a tray, sprinkle with fleur de sel, pepper and olive oil and broil under broiler. Turn the vegetables both sides to grill them.
Mix bell peppers with the rest of the vegetables, add broth garlic, oregano and using a hand blender, mix to obtain a smooth purée.
For the tofu croutons, cut tofu in small cubes, coat them with flour, remove excess flour. Heat olive oil in a pan saute tofu at high temperature until both sides turn golden brown. Serve in bowls, add tofu croutons in the middle and drizzle with olive oil and extra oregano.
This soup can be eaten lukewarm or hot. If you like it hot, just heat it up on the stove for a few minutes before adding tofu.
I am in love again – Vegetable and haloumi skewers on mâche salad with fava beans – roasted bell pepper, capers and lemon vinaigrette

Have you ever felt this strong chemistry with someone you just meet for the first few seconds, without even talking just by the energy that this person emits? It can be a man or a woman, just anyone. There is something out there, as if your energy “captures” the energy of the other person and something magical happens…Now between a man and a woman, it can be more of a sexual chemistry (well among same sex people too, if you are gay). It happened to me with a lady I met (I am not gay) and the first three seconds I saw her, I just liked her. I felt so comfortable and at ease, that I thought I knew her. Not sure how it’s called, maybe the pheromones (between two people from opposite sex), the chemistry, I don’t know. It is a strange feeling when this happens. Things feel just right.
Well this happened to me today with…this salad. I am just in love. In this particular case it has to do with the flavors, my palate met those “magical flavors and we are in love (well at least me). I have been eating this three days in a row and cannot get enough of it. I am hooked, the only problem is that that beautiful haloumi has too many calories for a every day consumption, so I just added a few pieces here and there, among the other vegetables. This whole composition matches what I love best and what I enjoy eating most, light, fragrant, nutritious, dishes that make you feel good after you eat them. I am very health conscious (sometimes I tend to be a freak in that area, I am aware of it), since I work out two hours a day and I do pay a lot of attention to what I eat. The good thing is that I am against all kinds of diets, which I think most of them deprive your body from many nutrients, and I cannot eat blend food, it needs to be exciting, fragrant, and most of all stimulate my sense. So yes I am deeply in love, and here is the “heureux élu“, the lucky one, that makes my palate race. Et ça, c’est l’amour!!!!!
This type of dressing can be used in many ways, I just like it on grilled vegetables, the sweetness of the grill pepper combined with capers and lemon results in a wonderful and magical blend.
Now my other little weakness is the mâche salad, I have always been going crazy for it, we grew it in the garden and it’s a very common salad in France. I have some strong memories of huge quantities of mâche prepared just for me when I came home from High school (I was lucky enough to come and have lunch with my parents when going to school)…and those memories will not fade away.
Ingredients for 4 (2 skewers each)
- 3 small zucchini, cut crosswise (about 3/4 inch thick)
- 1/2 red onion
- 16 cherry tomatoes
- 1 piece haloumi
- mâche salad
- 1 cup fava beans
- 1/3 tsp cumin powder
- 1 tsp olive oil
- 1 tsp lemon
- salt and pepper
For the vinaigrette
- 1 red bell pepper
- 1 garlic clove, crushed
- 1 tbs basil, chopped finely
- 1 tsp capers, chopped finely
- zest of 1 lemon (keep some for decoration)
- Juice of 1/2 lemon
- cayenne pepper
- salt and pepper
Preparation
In a mixing container, combine zucchini, tomatoes, onions, then add cumin, lemon juice, olive oil, salt and pepper. Cover, marinate and refrigerate for a few hours.
After they marinate, using a bamboo skewer, take a zucchini slice, an onion piece, a piece of haloumi, onion and proceed with all the ingredients. Grill on a grill pan until all the sides are golden brown. Serve hot on a bed of fava bean/mâche salad, and spoon vinaigrette on top.
For the vinaigrette
Roast pepper in the oven under broiler. When the skin is all charred, take pepper out from oven, let it cool, then remove skin and seeds. Cut in small dices.
In a bowl, combine peppers, capers, lemon zest, lemon juice, olive oil, basil, garlic, cayenne, salt and pepper. Mix well.
For the salad
Remove fava beans from their pod. Bring a pot of boiling water to a boil, then add fava beans. Cook for about 3 minutes (less if the beans are small and tender), drain and peel. Set aside.
Let the fava bean cool. Mix with mache salad, and drizzle with a little oil, lemon juice and a little bit of salt.

I am going back to my roots with this dish. Once in a while, it feels good to go back to old and traditional ways of cooking even if it it can be time consuming. Cooking being therapeutic for me (like for most people who love cooking), when I am stressed, I cook, and the longer, the better. Sundays are perfect for these rituals.
I am in love with my new pasta cutting tool called chitarra. Eventhough it produces a different kind of music, it’s just wonderful lyrics to my ears. Due to its shape and strings it has the same name as the musical instrument guitar (chitarra in Italian means guitar) due it its strings. Spaghetti alla chitarra is my favorite pasta, anytime I am in Italy I buy it and eat them during a whole week. Those are a specialty from Abruzzi and the neighboring regions further South. Basically the strings of the chitarra are the cutting tool. You can either use the rolling pin or your hands to press the pasta sheet on the strings. The two particularities of this pasta is first, you need to have a pasta thickness, similar to the width of the guitar strings, second it’s an egg based pasta.
When using a chitarra, the texture of the pasta is really different, more rugged and thicker since the width of spaghetti is supposed to be the same size as the depth, basically you get square spaghetti.
Chitarra is available in the US at Sur La Table, so for those who are passionate about pasta and want to experiment old ways of making and cutting it, I suggest you try it out.
The dough has 80% farro (or spelt) that’s why you get a darker and golden color and the sauce is vegetarian. The traditional spaghetti alla chitarra from Abruzzi region is made out of a lamb ragù. Of course, you can use your creativity and taste as far as the sauce is concerned. I am still on some vegetarian funk lately, so this worked beautifully for me.
Ingredients for 4
For the pasta dough
- 100 g white flour
- 200 g farro flour
- 3 eggs
- water
For the sauce
- 6 medium size tomatoes on the vine, well ripe, peeled, seedless and chopped
- 1 carrot, peeled and sliced
- 2 zucchini, diced
- 1 small eggplant, diced
- 1/2 red bell pepper, diced
- 1/2 small yellow onion
- 1 garlic clove, crushed
- 2 tbs olive oil
- hot chili pepper (peperoncino)
- basil or oregano
- 4 tbs ricotta
- 1 tbs chopped olives (optional)
- salt and pepper
Preparation
For the pasta
In a working surface mix flours together, add eggs, and gradually incorporate flour. Add a little water if necessary (if dough is too hard) and knead for about 15-20 min to obtain a round and smooth ball. Wrap in a plastic film and let it rest for about 30 min.
In a flat surface (preferably wood, such as a spianatoia, the Italian flat wooden board to roll the pasta dough), using a large and not tapered rolling pin, roll dough to obtain a thin sheet. You can use a pasta machine if you have not mastered the art of rolling dough. The sheet should be thin but not overly thin, something like 2 mm thick.
When the sheet is ready, take chitarra to cut strings. Place sheet on top of strings and using the rolling pin, roll it from top to bottom of the pasta sheet. The spaghetti will fall into the chitarra, and you just have to remove them. Proceed until you have finished with the sheets.
For the sauce
In a pan, heat olive oil. Add onions and brown them. Add the rest of the vegetables, salt and pepper. Cover with lid and let cook until tender but still firm.
In another pot, heat olive oil. Add garlic and stir to get flavors out. Add oregano (or basil) and tomatoes, and cook until the tomatoes are starting to form a thick sauce (about 10-15 minutes). Add chili peppers, salt and pepper.
When the vegetables are cooked, add to the tomato sauce and mix well. If you decide to add olives, add at this point. Add extra olive oil.
Bring a pot of salted boiling water to a boil, add spaghetti. Cook for a few minutes, or until spaghetti come at the surface. Remove from stove and drain.
Place spaghetti in a large pasta dish, pour sauce on top. Serve in dishes with ricotta on top and sprinkle with either oregano or basil. Serve hot.

Un’altro modo per cucinare la pasta – Pasta risottata con fave, zucchine e pomodorini
After this weekend ordeal, I needed to eat something to soothe my mind…Pasta especially pasta in bianco (with burro e parmigiano, butter and parmesan) is a dish that always remind me of when I was a child and sick, my mom would cook this dish for me who supposedly helped to cure whatever sickness one may have. It did not but, it’s sometimes good to believe it.
You cannot tell an Italian how to cook pasta, it’s ingrained in their DNA…Like the Swiss and skying, it seems like they’re born with skies on.
There are indeed many ways to cook pasta, one less known method is called “risottata“, meaning like a risotto where broth is added gradually. I did not come up with it, it’s a very old Italian method of cooking pasta! so, no pasta is not always boiled in salted water, drained and served topped with sauce. My father loves pasta overcooked…well at least well cooked, my mom and I, if it’s not VERY al dente, we don’t eat it, so usually the al dente eaters, take the pasta out of the pot first while the other ones can wait a while longer. He always looks at us horrified, mà come potate mangiare la pasta così cruda???? (how can you eat pasta that raw), well we can.
Pasta risottata being cooked a long time, takes longer than the usual way of boiling it in water. The risottata method allows it to keep its starch, therefore develop a particular creaminess (I wanted to show that creaminess on that second photo even it’s a screaming, right in your face type of a picture!)…can you just imagine the deliciousness of the pasta while having absorbed all that flavorful broth? It’s really my favorite way to cook and eat pasta. You need to try to believe it. For this cooking method, you need short pasta (pasta corta) such as small penne, or anything that size.
The recipe is quite simple, the greatness of the pasta comes first from the risottata method, then the combination of the ingredients make it a real treat.
Ingredients for 2
- 160 g short pasta
- 100 g fresh fava bean, pod removed
- 2 zucchini, diced in small cubes
- 1/2 cup cherry tomatoes, cut in halves
- vegetable broth
- 1 shallot
- 1 garlic clove
- Parmigiano Reggiano, freshly grated
- salt and pepper
Preparation
Heat olive oil in a pan and add garlic, stir for a few minutes, then add zucchini, cover and let cook until the zucchini start to be cooked but firm, then add tomatoes, salt and pepper. Let cook until the tomatoes start to soften. Set aside.
In the meantime, blanch fava bean grains in boiling water for about 2 minutes depending on the size of the grains. IF the grains are small and tender, one minute is enough. Drain and peel beans. Add to the pan with the other vegetables.
In a pot, heat olive oil, add shallots and brown them. Add pasta and proceed like you would for a risotto, adding gradually broth to cook it. When the pasta has reached the desired consistency (it will need to be slightly creamy), add vegetables and parmesan. Stir well and serve hot.
