I think this dish is perfect for a tête à tête dinner (according to the dictionary, tête à tête is also used in English) to share with someone you care. I have been alone for about two weeks now, due to business trips of TP so I decided to have a tête à tête dinner with myself and I was quite happy about it.
Well, I think no matter what, you need to treat yourself as often as you can (that’s my theory on life) and enjoy anything even if you are by yourself.
My dog and bird are keeping me company…so temporarily being alone has some good sides and bad sides. You tend to enjoy the whole bed, no daily laundry, no mess around but then when you find a half mouse dead in your patio with just the tale and legs, you have to figure out a way to clean it…I suspect the neighbors cats left it as a present.
After one hour of thinking how to remove it, I was embarrassed to ask my neighbor (the most adorable neighbors you can dream of) but I didn’t want to leave this mess in the patio and lacked courage to pick it up, so I had to tell them that Mr. Cat must have played too hard with a mouse again, so Gary cleaned it up for me. Thanks Gary!
We do use cilantro and coconut in French cuisine, even though it’s not really something you would use on a daily basis, and parsley is more frequently used than cilantro, those two ingredients are not unfamiliar to our cuisine. This fragrant pesto is delicious, the raw coconut adds a smooth finish to the dish. Oeuf cocotte is such a versatile dish and so much fun to eat. You can also use fava beans instead of the asparagus and white fish instead of the salmon, just play with it.
This combination is truly a harmonious blend of flavors, and a perfect little dish for a light diner en amoureux… or a diner for treating yourself!
Ingredients for 4
- 2 salmon fillet or 7 oz (or 200 g), diced
- 6 asparagus, cut in one inch pieces
- 1 shallot, chopped
- 3 tbs dry white wine
- 3 tbs crème fraîche
- 1 tbs olive oil
- 2 eggs
- salt and pepper
For the cilantro-coconut pesto
- 1/2 bunch cilantro
- 1 garlic clove, crushed
- 0.70 oz (or 20 g) raw unsweetened coconut shredded
- 4 tbs olive oil
- salt and pepper
Preparation
For the cilantro-coconut pesto
Mix all ingredients in a blender.
Heat olive oil in a pan, add shallots and brown them. Add asparagus, wine, salt and pepper. Cover and cook until asparagus are cooked but still crunchy. Add salmon and cook for a few minutes. Add 2 tbs of pesto and stir for 30 seconds. Add cream and let it reduce a little.
Divide teh mixture into ramequins. Break on egg on top, add salt and pepper. Cook in a pre-heated oven until the yolks are runny and the whites still a little transparent. Serve with extra pesto on the side.

I agree–everyone should treat themselves sometimes. It certainly takes the edge off.
Now, that pesto sounds AMAZING. I can imagine it on all sorts of fish–maybe with hazelnut or macadamia. I need to learn more French cuisine.
Also–I would have done the same thing with the mouse. Two years ago, I returned to my apartment after being at home for the summer only to find that mice had taken up residence in my pantry. At 9am on a Saturday morning I frantically knocked on my landlord’s door yelling about a half-dead mouse and made him come get it. The biggest downside to being alone: no one to kill or pickup spiders, bugs or rodents.

Coconut pesto…now that surely got my attention…I may substitute the cilantro (not a fan) for another herb…and everything should be delicious. Gotta make this pronto!
A moment with yourself…I have those too…and I still light the candles and set the table as if my Hubby were there. I do cheat though…once and a while I’ll eat on my long chair
I admit though…it is less lonely since I have my puppy keeping me great company. Silvia…I’m sure you are kept very busy with your little family too ;o)
I don’t wish to dwell on the part about mice…my tale is to say the least…one from a horrible moment in our beautiful home…and I do understand how unnerving it must have been for you.

this sounds wonderful, love the coconut pesto and salmon is about all we eat now with its healthy omega in it so trying to stay away from shellfish with who knows what will be in the future with all the gulf problems great recipe will try this soon,, hope your feeling better now~

This dish looks lovely, perfect for a tête à tête, even if you’re having a single night in.
I would substitute parsley too; am not a cilantro lover. But the coconut pesto sounds wonderful.

Good philosophy! Life is too short to deny yourself little pleasures. The flavors do sounds completely wonderful. A great combination of rich ingredients with the light–almost flirtatious pesto!
The mouse incident gave me a good chuckle! I once stepped BAREFOOTED on such a gift from a cat. I will NEVER quite forget how that felt!

Wonderful recipe. Great job taking the time to present your food beautifully. As someone who takes pride in presentation I can appreciate how much thought and patience goes into it.

I don’t envy having to take care of that mouse! I am such a wimp when it comes to dead animals…one of the reasons that I’m a vegetarian is that I can’t even handle touching chicken breasts or beef. I agree that we all need to enjoy and appreciate life and good food, regardless if we are single.

I didn’t know cilantro and coconut milk were used in French cuisine! Sweet! I’m all in for this dish. Beautiful in flavor and presentation.
The green of pesto and that egg make me want to dive in the food right now.

Hey Silvia, I’ve never heard of a cilantro coconut pesto. That sounds so nice! I have to try that in some way. I always have coconut in my pantry.
By the way, my cat used to bring me live snakes as a gift. She was always so proud of herself, and my freaking out would only lead to her feeling seriously dejected. It’s weird, but it sounds like the neighbor’s cat loves you (smile)…

Hi Silvia, I like your pesto recipe, it sounds delicious. My neighbor had a big frog from the amazon which escaped into our garden and literally croaked right on the patio, I went to his house and asked him if he was missing his frog when he said yes he lost his frog I told him it’s location and to come on over and pick it up! Yuck! Sorry I just had to share this story with you, I hope you’re feeling better:-)

We need treats every so often ! Coconut & cilantro are among my favorite foods/herbs so will give this a try. I thin people forget that France have their tropical islands so coconut & cilantro do come into play. Bravo !!!

I love this, especially for its versatility. I would, for example, definitely go for parsley instead of cilantro but that’s only because I’m a confirmed cilantrophobe. As for enjoying a tete-a-tete toute seule, I think that’s one of the most decadent ways sometimes!

I wouldn’t substitute anything here personally; I like it just the way it is. Asparagus is my favorite veggie and I always enjoy it with salmon. The egg is a nice bonus.
I know what you mean about those kitty presents–our cat leaves them for us fairly regularly. Thankfully, he usually does it when my husband is around!

Oh No! I’ve had a terrible mice experience in my very first apartment out of college! My roommate’s cat pounced on me as I was laying on my bed and dropped a dead mouse on my chest! Disgusting!!! I don’t blame you for being afraid…I was/am very afraid! Also, am very happy to hear that you are feeling. No doubt, this delicious/gorgeous recipe you have for salmon, eggs and incredible coconut pesto helped you feel back to your old self!
