Une douceur toute verte – Crêpes au thé vert et oranges confites

Who doesn’t know crêpes? and most of all who doesn’t like them?

I think our little pancakes got popular all over the world, and they can be as sophisticated or as plain as your imagination can be. Originally crêpes come from Brittany (Bretagne), they make them with buckwheat flour and are mostly called “galettes”. The tradition is to make crêpes for chandeleur. It’s basically a holiday celebrated 40 days after Christmas, on February 2nd and that has to do with a purification ceremony of the Virgin Mary. For many centuries, Chandeleur was celebrated with candles and crêpes which symbolized the beginning of Carneval season.

Nowadays no one really cares about its religious meaning and all we remember is that on February 2nd we make and eat crêpes.

I bought some matcha green tea a while ago that I absolutely love, I love its color, its texture, its flavor and was wondering what a green tea crêpe would taste…then the idea of a plain green tea crêpe did not thrill me so I decided to add some candied orange zest and coconut flour to the batter, and the result was…amazing.

If you decide to use coconut flour, do not put too much, maximum 2 tbs, coconut flour absorbs a lot of liquid, and will make the batter really thick, it’s high in fibers and has no gluten so its changes the texture of the batter. If the batter gets thicker, add milk until it reaches a nice and more fluid consistency.

Ingredients for 3 people

  • zest of one orange
  • 1 tsp butter
  • 20 g sugar
  • 125 g white flour or 100 g white flour and 25 g coconut flour
  • 1 tbs green tea powder
  • 2 eggs
  • 250 ml low fat milk (or almond milk)
  • a pinch of salt

Preparation

In a container, add flour, sugar and salt, then add eggs and milk. Mix well until the batter becomes smooth, add green tea.

Wash orange take zest in small strips. Boil in water for 3 minutes, drain and pat dry.

In a pan melt butter, add orange zest, sprinkle with sugar and let it caramelized. Add them immediately to the batter, mix well and set aside for 30 min.

In a non stick pan, make crêpes and sprinkle with sugar.
